How am i able to make it so insted of saying "Vendor Buy" "Vendor Sell" or "Vendor Train <skill>" you just double click them a gump opens with them 3 options there..?

In this case you have to use the SYSEVENT_DOUBLECLICKED instead of the SYSEVENT_SPEECH and script the gump you wanted.
