I will begin looking through the topics that I can moderate to determine off-topic posts and move them to the appropriate forums.

You could just make one forum named "Miscellaneous" and move all posts to that forum and remove all the other forums. Very simple and it makes the moderators job so much easier. Then all we have to do is be on the lookout for spam.
